Ingredients

For the red chile sauce (any time)

  • 325 g tomato sauce (from a 425 g can)
  • 40–50 g chipotle chilis in adobo (about 3 tbsp)
  • 3 g chili powder (about 1 1/4 tsp)
  • 2 g salt (about 1/2 tsp)
  • 1 pinch paprika
  • 1 pinch ground cumin
  • 1 pinch garlic powder
  • 1 pinch onion powder
  • 1 pinch dried oregano

For the chilaquiles

  • 2 oz red chile sauce (about 1/4 cup)
  • 75 g thick tortilla chips (a large handful)
  • 1/4 cup Chihuahua cheese, shredded (about 30 g)
  • 1 tbsp olive oil
  • 1 large egg
  • 1 pinch salt
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 1/4 avocado, diced

Method

For the red chile sauce (any time)

  1. Pour off about 100 g from a 425 g can of tomato sauce to create space.

  2. Add the chipotle chilis in adobo, chili powder, salt, paprika, cumin, garlic powder, onion powder, and oregano directly into the can.

  3. Blend with an immersion blender inside the can until smooth, 15–20 seconds.

For the chilaquiles

  1. Preheat the oven to 450°F (232°C).

  2. Heat 2 oz of the prepared red chile sauce in a nonstick pan over medium heat for 10 seconds.

  3. Add the tortilla chips and stir quickly to coat them with the sauce.

  4. Toss in half of the Chihuahua cheese to mix through, then sprinkle the remaining cheese over the top.

  5. Transfer the pan to the oven and bake until the cheese is melted, 4–5 minutes.

    Then 4 min of waiting

  6. Meanwhile, heat the olive oil in a separate small nonstick pan over medium-low heat.

  7. Crack in the egg, season with salt, fry for 90 seconds, then break the yolk and flip carefully to cook for another 30 seconds.

  8. In a small dish, stir the sour cream, milk, and a pinch of salt together to make crema.

  9. Transfer the baked chilaquiles into a bowl, drizzle with crema, scatter the diced avocado on top, and crown with the fried egg.
