  • 25 g Dijon mustard (about 1 tbsp)

For the sandwich

  • 1 tbsp olive oil
  • 1 brioche bun, split
  • 1 large egg
  • 1 pinch salt
  • 1 slice American cheese
  • 3 slices thinly shaved ham

Method

For the mustard mayonnaise (any time)

  1. Stir the mayonnaise and Dijon mustard together in a small bowl.

For the sandwich

  1. Heat a 10" nonstick pan over medium heat with a little olive oil.

  2. Drop the brioche bun cut side down and toast until golden brown, about 30 seconds.

  3. Set the toasted bun aside.

  4. Add a touch more olive oil to the pan over medium-low heat.

  5. Crack the egg into the pan and season with a pinch of salt.

  6. Fry for 60 seconds to set the white on the bottom.

  7. Crack open the yolk with a spatula and flip the egg over.

  8. Top the egg with the cheese slice and cook until the cheese is melted, 45–60 seconds.

  9. Spread a teaspoon of mustard mayonnaise on the bottom bun.

  10. Layer the shaved ham onto the bottom bun.

  11. Slide the cheesy fried egg on top of the ham.

  12. Close the sandwich with the top bun and serve immediately.
