Peanut Butter Sesame Noodles

Ingredients

For the noodles

  • 90 g ramen noodles (or any quick-cooking noodles)
  • Water for boiling

For the sauce

  • 2 tbsp creamy peanut butter
  • 1/3 cup reserved noodle cooking water
  • 1 tbsp soy sauce
  • 1 tsp black vinegar (or rice vinegar)
  • 1 dash toasted sesame oil
  • 1–2 tsp chili oil

For the dish

    For the garnishes

    • 2 green onions, thinly chopped
    • 1 tsp white sesame seeds
    • 2 tbsp crushed peanuts

    Method

    For the noodles

    1. Bring a pot of water to a boil.

    2. Add the noodles and cook according to package instructions, stirring occasionally, about 3–4 minutes.

    For the sauce

    1. In a mixing bowl, combine the peanut butter and 1/3 cup of the hot noodle cooking water.

    2. Whisk or stir until smooth and thinned out.

    3. Add the soy sauce, black vinegar, toasted sesame oil, and chili oil to the peanut butter mixture.

    4. Mix well until fully combined into a smooth, rich sauce.

    For the dish

    1. Drain the cooked noodles thoroughly.

    2. Transfer the drained noodles directly into the bowl with the sauce.

    3. Add the sliced green onions and toss well using chopsticks or tongs until the noodles are thoroughly coated.

    4. Plate the noodles into a serving bowl.

    5. Garnish with white sesame seeds and crushed peanuts.
