Smashed Cucumber Salad

Ingredients

  • 2 lb mini cucumbers (900 g)
  • 1 large clove garlic
  • 1 stick green onion
  • 2 tsp white sesame seeds
  • 1/2 tsp white pepper
  • 1 tsp gochugaru (Korean pepper powder)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp smoky spicy chili oil

Method

  1. Gently smash the mini cucumbers with a muddy mallet or heavy tool to open them up.

  2. Coarsely chop the smashed cucumbers into bite-sized pieces.

  3. Transfer the chopped cucumbers to a large mixing bowl.

  4. Grate in the garlic clove.

  5. Finely chop the green onion and add it to the mixing bowl.

  6. Add the white sesame seeds, white pepper, gochugaru, soy sauce, rice vinegar, and smoky chili oil to the bowl.

  7. Mix thoroughly until the cucumbers are well coated in the sauce.

  8. Plate and serve immediately, or chill in the fridge overnight to intensify the flavors.

  9. Flavor intensifies if allowed to rest overnight in the refrigerator.
