Oats Banana Cake

Ingredients

  • 100 g rolled oats (1 1/4 cups)
  • 343 g overripe bananas (2 large, 7-8 inch)
  • 2 large eggs, at room temperature
  • 1 tsp vanilla essence
  • 75 ml warm milk (1/4 cup plus 1 tbsp)
  • 60 g dark chocolate, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon powder
  • Mini semi-sweet chocolate chips, for topping

Method

  1. Pre-heat the oven to 350°F (180°C) and line an 8-inch loaf pan with parchment paper.

  2. Blend the rolled oats in a blender into a fine powder, about 30 seconds.

  3. Mash the overripe bananas in a large bowl until smooth and liquidy, 2-3 minutes.

  4. Whisk in the room-temperature eggs and vanilla essence until well combined.

  5. Add the blended oat flour and fold gently until combined.

  6. Pour in the warm milk and mix well.

  7. Cover the bowl and let the batter rest so the oats absorb the liquid, 10–15 minutes.

  8. Chop the dark chocolate.

  9. Fold the chopped dark chocolate, baking powder, baking soda, and cinnamon powder into the batter until evenly distributed.

  10. Pour the batter into the lined loaf pan and top with mini semi-sweet chocolate chips.

  11. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
