Goat Meat Fried Rice

Ingredients

For the goat meat

  • Seasoned goat meat
  • Water, to cover
  • Scotch bonnet pepper

For the rice

  • Rice
  • Goat meat broth (from cooking meat)

For the fried rice

  • Vegetable oil
  • Chopped garlic
  • Chopped onion
  • Chopped red peppers
  • Curry powder
  • Thyme
  • Bouillon cubes
  • Salt
  • Chopped bell peppers
  • Chopped chilli
  • Cooked goat meat (from earlier step)
  • Cooked rice (from earlier step)

Method

For the goat meat

  1. Place seasoned goat meat in a pot, add water to cover, and add scotch bonnet pepper.

  2. Cover and cook until soft.

    Then 20 min of waiting

  3. Remove the cooked goat meat from the broth, chop into small bite-sized pieces, and set the broth aside for the rice.

  4. Fry or grill the chopped meat until browned and set aside.

    Then 10 min of waiting

For the rice

  1. Add rice to the reserved meat broth and cook until tender.

    Then 15 min of waiting

For the fried rice

  1. Heat vegetable oil in a wok or pan and sauté chopped garlic and chopped onion until fragrant.

  2. Add chopped red peppers, curry powder, thyme, bouillon cubes, and salt; stir and cook for 2–3 minutes.

  3. Add chopped bell peppers and chopped chilli, stirring well to combine.

  4. Stir in the prepared fried/grilled goat meat pieces.

  5. Add the cooked rice and mix thoroughly until evenly coated and heated through.
