Pineapple Ginger Juice

Ingredients

For the pineapple skin decoction

  • 3 pineapples (skins and cores)
  • 1 turmeric root (or 1 tsp ground turmeric)
  • 1 ginger root, peeled and pounded
  • 1 tsp apple cider vinegar
  • Water to cover

For the juice

  • 3 pineapples (flesh), chopped into chunks
  • 1 ginger root, peeled and pounded
  • 6 lemons, juiced

Method

For the pineapple skin decoction

  1. Scrub the pineapple skins thoroughly with a brush in a bowl of water with a splash of apple cider vinegar, then rinse twice with clean water.

  2. Place the pineapple skins, cores, turmeric, and half of the pounded ginger into a large pot.

  3. Pour in enough water to cover all the ingredients.

  4. Bring to a boil over medium heat and cook for 15 minutes.

  5. Reduce the heat to low, cover, and simmer for 45 to 60 minutes.

  6. Strain the decoction through a fine mesh sieve into a bowl and set aside to cool.

For the juice

  1. Add the chopped pineapple flesh, the remaining pounded ginger, and a splash of the cooled pineapple skin decoction into a blender.

  2. Blend until smooth.

  3. Strain the blended pineapple mixture through a cheesecloth or fine strainer, squeezing out all the juice.

  4. Scoop off any foam from the top of the strained juice.

  5. In a large bowl, combine the fresh pineapple juice, the cooked pineapple skin decoction, and the lemon juice.

  6. Stir well and serve over ice.

  7. You can sweeten this drink with honey or sugar to taste if desired, though the natural sweetness of the pineapple is usually enough.
