Ingredients

  • 10 oz quail eggs (boiled and peeled)
  • 4 oz shishito peppers, topped
  • 15 garlic cloves, peeled
  • 1/2 cup soy sauce
  • 1 tbsp fish sauce
  • 3/4 cup mirin
  • 1/4 cup sugar
  • 1/4 cup water

Method

  1. Put the soy sauce, fish sauce, mirin, sugar, and water into a small saucepan over medium-high heat.

  2. Add the garlic cloves and bring the mixture to a simmer, about 3 minutes.

  3. Add the shishito peppers and simmer until slightly softened, about 2 minutes.

  4. Add the quail eggs to the saucepan and stir briefly to combine.

  5. Remove the pan from heat and transfer the eggs, garlic, peppers, and liquid into a sealable glass container.

  6. Cover and let the eggs soak in the sauce until the flavor seeps in before serving.
