Stir-Fried Burdock Root

Ingredients

For the sauce

  • 4 tbsp soy sauce
  • 1 tsp fish sauce
  • 3 tbsp mirin
  • 1 tbsp sugar
  • 1 tbsp honey (or agave syrup)
  • 1/4 tsp black pepper
  • 1/2 tbsp sesame seeds

For the burdock root

  • 2 burdock roots (about 1.2 lb / 550 g)
  • 1 lime
  • 1 tbsp minced ginger
  • 1 tbsp sesame oil

Method

For the sauce

  1. Add the soy sauce, fish sauce, mirin, sugar, honey, black pepper, and sesame seeds into a measuring cup.

  2. Stir everything together until well combined.

For the burdock root

  1. Scrub the dirt off the burdock roots using a sponge under running water.

    Keep the skin on to retain the concentrated nutrients.

  2. Shred the burdock roots into thin strips using a vegetable peeler or knife.

  3. Soak the shredded burdock root in a bowl of cold water with lime slices.

  4. Mince the ginger finely.

  5. Drain the burdock root thoroughly.

  6. Heat a pan over high heat, then add the sesame oil and minced ginger.

  7. Add the drained burdock root to the pan.

  8. Stir-fry the burdock root until slightly softened, about 3–4 minutes.

  9. Pour the prepared sauce over the burdock root.

  10. Stir-fry constantly until the liquid reduces and the burdock root is evenly glazed, 3–5 minutes.

  11. Transfer to a container, let cool, and store in the refrigerator.
