Yangnyumjang (Korean Everything Sauce)

Ingredients

  • 4 cloves garlic, minced
  • 1/2 large onion, finely chopped
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 1/2 tbsp Korean green plum extract (maesilaek) or cranberry juice
  • 3 tbsp gochugaru (Korean red pepper flakes)
  • 1 tbsp toasted sesame seeds
  • 2 green chili peppers (such as serrano or jalapeno), finely chopped
  • 3 green onions, chopped
  • Sesame oil to taste

Method

  1. Chop the garlic and onion finely.

  2. In a small bowl, combine the soy sauce, mirin, and green plum extract.

  3. Add the chopped onion, gochugaru, sesame seeds, chopped green chili peppers, and green onions.

  4. Stir everything thoroughly until well combined.

    The salt from the soy sauce will draw out the natural juices from the onions and peppers as it sits.

  5. Drizzle with sesame oil just before serving over rice, fried eggs, or grilled seaweed.
