Ingredients

For the fillings

  • 3 oz Danmuji (Korean pickled radish)
  • 1 English cucumber
  • 1 cup stir-fried burdock root
  • 3 large eggs
  • 1 tbsp mirin
  • 3 to 4 oz Spam, cut into sticks
  • 3 sticks imitation crab meat
  • Cooking oil
  • 6 kkaetnip (Korean wild sesame leaves)

For the rice

  • 2 cups warm cooked medium to short grain rice
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • Pinch of black pepper
  • 1 tbsp sesame oil, plus more for brushing
  • 1 tsp sesame seeds, plus extra to garnish

To assemble

  • 3 roasted gim (nori) sheets

Method

For the fillings

  1. Slice the pickled radish and cucumber into long, thin strips.

  2. Beat the eggs with mirin in a bowl.

  3. Heat a splash of cooking oil in a pan, pour in the eggs, and roll into a thin omelette.

  4. Remove the omelette and slice into long strips.

  5. In the same pan, fry the Spam sticks until browned and crispy.

  6. Fry the imitation crab meat in the pan until heated through and lightly seared.

For the rice

  1. Combine the warm cooked rice, salt, sugar, black pepper, 1 tbsp sesame oil, and 1 tsp sesame seeds in a mixing bowl.

  2. Mix thoroughly with a spoon until evenly seasoned.

To assemble

  1. Place a sheet of gim shiny-side down on a mat or board, and spread a thin, even layer of rice over three-quarters of the sheet.

  2. Lay two sesame leaves across the rice, then arrange the cucumber, pickled radish, burdock root, egg strips, Spam, and crab meat along the middle.

  3. Roll tightly from the bottom using firm, even pressure to form a neat cylinder.

  4. Brush the outside of the rolled kimbap with sesame oil.

  5. Slice into bite-sized rounds with a sharp knife and sprinkle extra sesame seeds on top before serving.
