Nogahk Muchim (Korean Old Cucumber Salad)

Ingredients

  • 2 small old cucumbers (nogak), about
  • 2 lbs (900 g) total
  • 1 tbsp coarse salt
  • 2 cloves garlic, chopped
  • 3 green onions, chopped
  • 1 tbsp gochugaru (Korean chili flakes)
  • 1 tbsp gochujang (Korean chili paste)
  • 2 tsp maesilaek (Korean green plum extract)
  • 1 tbsp sesame oil
  • Cooked rice, for serving (optional)

Method

  1. Peel the cucumbers using a vegetable peeler.

  2. Slice the cucumbers lengthwise in half.

  3. Scoop out and discard all the seeds using a spoon.

  4. Slice the cucumber halves into 1/4-inch thick slices.

  5. Place the sliced cucumbers into a bowl, sprinkle with the coarse salt, and mix well to coat.

  6. Mince the garlic cloves and chop the green onions.

  7. Place the salted cucumbers into a cheesecloth or nut milk bag, and squeeze firmly to extract as much liquid as possible.

  8. Transfer the squeezed cucumber slices back into a clean bowl.

  9. Add the gochugaru, gochujang, maesilaek, chopped garlic, and chopped green onions.

  10. Mix everything thoroughly by hand until the cucumbers are well coated with the seasonings.

  11. Serve as a side dish, or mix with cooked rice and sesame oil.
