Saba no Miso-ni (Simmered Mackerel with Ginger)

Ingredients

  • 2 mackerel fillets (about 200 g each), skin lightly scored
  • 1 piece fresh ginger, sliced into thin coins
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 tbsp sugar
  • 1/2 cup water (about 120 ml)

Method

  1. Place the soy sauce, mirin, sake, sugar, water, and sliced ginger into a small skillet or saucepan.

  2. Bring the mixture to a boil over medium heat until the sugar dissolves.

  3. Add the scored mackerel fillets to the pot, skin side up.

  4. Cover with a drop-lid (otoshibuta) or pan lid, turn the heat down to low, and simmer until the fish is cooked through and tender, about 8–10 minutes.

  5. Remove the lid and gently spoon the simmering glaze over the mackerel repeatedly to coat the tops evenly.

  6. Continue simmering until the liquid thickens into a glossy sauce, 2–3 minutes.

  7. Transfer the mackerel fillets to serving plates and drizzle with the remaining pan sauce and ginger slices.
