Ingredients

  • 500 g gnocchi
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, diced
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, juice only
  • Salt and fresh black pepper, to taste

Method

  1. Heat olive oil in a large skillet or wok over medium-high heat.

  2. Add the broccoli florets and diced red bell pepper to the pan and cook for 3–4 minutes until slightly softened.

  3. Add the gnocchi directly into the skillet and toss with the vegetables.

  4. Pour in the heavy cream and stir in the grated Parmesan cheese, allowing the cream to bubble and thicken into a sauce, about 3–5 minutes.

  5. Squeeze fresh lemon juice over the entire dish right before finishing.

  6. Season with salt and fresh black pepper, toss well to coat, and serve immediately.
