Mini Detroit-Style Pizzas

Ingredients

For the crusts

  • Non-stick cooking spray
  • Flour, for dusting
  • 1 tube refrigerated pizza dough

For the sauce

  • 1 can crushed tomatoes with basil (about 14 oz / 400 g)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 pinch sugar
  • 2 tbsp tomato paste

For the toppings

  • 200 g white cheddar cheese (about 2 cups), half shredded and half cut into thin strips
  • 100 g mini pepperoni slices
  • 1 serrano pepper, thinly sliced
  • 2 tbsp hot honey
  • 2 tbsp Parmesan cheese, finely grated

Method

For the crusts

  1. Heat the oven to 500°F (260°C).

  2. Lightly grease four individual mini loaf pans or small springform pans with non-stick spray.

  3. Dust the work surface with flour and unroll the tube of pizza dough.

  4. Cut the dough into portions to fit the bottoms of the prepared pans and press each piece into the base.

  5. Pre-bake the dough crusts in the oven until slightly risen, about 4 minutes.

For the sauce

  1. Add the crushed tomatoes, garlic, oregano, red pepper flakes, salt, black pepper, sugar, and tomato paste to a tall container or blender cup.

  2. Blend with an immersion blender until smooth.

For the toppings

  1. Line the perimeter of each pre-baked crust with the strips of white cheddar to create a cheesy border along the pan edges.

  2. Divide the shredded white cheddar evenly over the crusts, pressing it right to the edges.

  3. Spoon a layer of the prepared tomato sauce over the cheese.

  4. Top each pizza with mini pepperoni slices and thin slices of serrano pepper.

  5. Bake in the oven until the cheese is melted, bubbly, and deep golden brown around the edges, 12–15 minutes.

  6. Allow the mini pizzas to cool in their pans for 3–5 minutes.

  7. Carefully remove the pizzas from the pans using a spatula and place them on a serving board.

  8. Drizzle each pizza with hot honey and finish with grated Parmesan cheese.
