Summer Berry Cast-Iron Pie

Ingredients

  • 4 cups frozen berries (blackberries, raspberries, blueberries)
  • 1/3 cup sugar, plus extra for sprinkling
  • 3 tbsp cornstarch
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • Pinch of salt
  • 1 store-bought refrigerated pie crust
  • 1 egg, beaten
  • 1 tbsp water
  • Vanilla ice cream, to serve

Method

  1. Preheat the oven to 365°F (185°C).

  2. Add the frozen berries, 1/3 cup of sugar, cornstarch, lemon zest, lemon juice, and a pinch of salt to a large bowl.

  3. Mix the ingredients together until well combined.

  4. Transfer the berry mixture into a 12-inch cast-iron skillet.

  5. Roll out the pie crust and drape it over the berry filling, tucking in the edges.

  6. Cut a few small air vents into the top of the pie crust using a knife.

  7. Whisk the egg with 1 tbsp of water, then brush the egg wash evenly over the pie crust.

  8. Sprinkle a layer of coarse sugar over the top of the pie.

  9. Bake in the oven until the crust is golden and the filling is bubbling, about 45 minutes.

  10. Serve warm with a scoop of vanilla ice cream on top.
