Countertop Pizza with Homemade Tomato Sauce

Ingredients

For the tomato sauce

  • 2 tbsp olive oil
  • 1 onion, finely diced
  • 1 clove garlic, minced
  • 100 g tomato paste
  • 800 g canned chopped tomatoes
  • 1 tsp Pul Biber (or chili flakes)
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1 pinch black pepper

For the pizzas

  • 1 portion prepared pizza dough (divided into 4 balls)
  • Grated mozzarella cheese
  • Toppings of choice (mushrooms, anchovies, capers, pineapple, cooked ham, or fresh basil)

Method

For the tomato sauce

  1. Turn on the heating/cooking function on the stand mixer or set a saucepan over medium heat, add the olive oil, diced onion, and garlic, and cook until softened and translucent, 3–4 minutes.

  2. Add the tomato paste and cook for 1 minute to cook out the raw flavor.

  3. Add the chopped tomatoes, Pul Biber, dried oregano, salt, and black pepper, stirring to combine thoroughly.

  4. Simmer the sauce for 5–10 minutes until thickened to a spreadable consistency, then remove from the heat and set aside to cool slightly.

For the pizzas

  1. Preheat the countertop pizza oven with the pizza stone inside to 750°F (400°C).

  2. On a floured work surface, gently stretch one ball of dough from the center outwards into a thin round pizza base, leaving a slightly thicker crust around the edge.

  3. Ladle a portion of the tomato sauce onto the center of the dough and spread it evenly towards the edges with the back of a spoon.

  4. Sprinkle a generous layer of grated mozzarella over the sauce and add your desired toppings.

  5. Using pizza peels, carefully transfer the assembled pizza onto the hot stone in the preheated pizza oven.

  6. Close the lid and bake for 3–4 minutes until the crust is puffed and golden brown and the cheese is melted and bubbling.

  7. Carefully lift the pizza out using the peels, slice, and serve immediately, repeating the process for the remaining dough balls.
