Apple Cider Spice Muffins

Ingredients

For the muffins

  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup finely shredded apple (about 1 medium apple)

For the cinnamon sugar topping

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted

Method

For the muffins

  1. In a small saucepan over medium heat, simmer the apple cider until it reduces to about 1/2 cup, 15–20 minutes. Allow to cool.

  2. Preheat oven to 400°F (200°C) and line a 12-count muffin tin with paper liners.

  3. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.

  4. In a separate bowl, whisk together the melted butter, granulated sugar, brown sugar, egg, applesauce, vanilla extract, and cooled reduced apple cider until combined.

  5. Pour the wet ingredients into the dry ingredients and whisk gently until just combined.

  6. Fold in the shredded apple using a spatula.

  7. Spoon the batter evenly into the 12 muffin liners.

  8. Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.

For the cinnamon sugar topping

  1. In a small bowl, mix together the granulated sugar and ground cinnamon.

  2. Brush the tops of the warm muffins with melted butter.

  3. Dip the brushed tops into the cinnamon sugar mixture to coat thoroughly.
