Homemade Apple Fritters

Ingredients

For the dough

  • 1 batch yeast dough (such as cinnamon roll dough)

For the apple filling

  • 2-3 apples, peeled and diced
  • butter
  • brown sugar
  • cinnamon
  • cornstarch
  • vanilla extract

For shaping

  • flour
  • ground cinnamon
  • ground nutmeg

For frying and glazing

    • powdered sugar
    • milk or water
    • vanilla extract

    • vegetable oil or neutral oil (for deep frying)

    Method

    For the dough

    1. Prepare a soft, rich yeast dough in a stand mixer.

    2. Cover and let the dough rise until doubled in size, about 1 hour.

    For the apple filling

    1. Add the diced apples, butter, brown sugar, and cinnamon to a saucepan over medium heat.

    2. Stir in a splash of cornstarch mixed with vanilla to thicken the juices.

    3. Cook until the apples soften and the liquid thickens, about 5–7 minutes, then remove from heat to cool.

    For shaping

    1. Mix cinnamon and nutmeg into the flour used for dusting your work surface.

      Adding spices directly to your dusting flour infuses extra flavor into every layer of dough.

    2. Roll out the risen dough on the spiced flour into a long, flat oval.

    3. Spread the cooled apple filling evenly over one half of the dough oval.

    4. Fold the empty half over the filled half and press to seal the edges.

    5. Using a bench scraper or large knife, chop the filled dough into small squares in a grid pattern.

    6. Gather and divide the chopped dough into 12 equal portions, loosely shaping each into a lumpy round.

    7. Place each portion onto a square of parchment paper inside a muffin pan.

    8. Let the shaped fritters rest in the pan to hold their shape before frying, about 15 minutes.

    For frying and glazing

    1. Heat at least 2 inches of oil in a heavy pot or Dutch oven to 350°F (175°C).

      Keep oil consistently at 350°F (175°C); oil that is too hot burns the exterior before the center cooks, while oil that is too cool makes fritters greasy.

    2. Carefully drop fritters into the hot oil, using the parchment paper to lower them in, and fry until golden brown on both sides, 2–3 minutes per side.

    3. Transfer fried fritters to a wire rack lined with paper towels to drain excess oil.

    4. Whisk together powdered sugar, milk, and vanilla extract in a shallow bowl until smooth.

    5. Dip each warm fritter into the glaze, turning to coat completely.

    6. Return glazed fritters to a wire rack to allow the glaze to set into a crisp, crackly shell.

    7. Pre-cooking the apples prevents them from releasing excess moisture during frying, keeping the fritters fluffy instead of soggy.
