Ingredients

  • 1 large toasted corn tortilla (tlayuda)
  • 1 tbsp asiento (rendered pork lard with bits)
  • 3 tbsp black bean paste
  • 2 tbsp cooked chorizo, crumbled
  • 1/4 cup cabbage, finely shredded
  • 2 slices tomato
  • 1/4 cup Oaxacan string cheese (quesillo), shredded
  • Salsa, for drizzling
  • Fresh cilantro, for garnish

Method

  1. Place the large toasted tortilla flat on a work surface.

  2. Brush the asiento evenly over the surface of the tortilla.

  3. Spread the black bean paste in an even layer over the asiento.

  4. Sprinkle the cooked chorizo evenly across the beans.

  5. Layer the shredded cabbage and tomato slices on top.

  6. Scatter the shredded quesillo cheese over the ingredients.

  7. Drizzle with salsa and garnish with fresh cilantro.

  8. Break or slice into pieces and serve immediately.

  9. The asiento and black bean paste act as the base layer, helping the toppings adhere to the crisp tortilla.
