Sardines on Chargrilled Toast

Ingredients

  • 4 thick slices sourdough bread
  • 1 garlic clove, split in half
  • 2 x
  • 120 g tins sardines in olive oil
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp finely grated lemon zest
  • 1/4 tsp chili flakes
  • 2 tbsp chopped flat-leaf parsley
  • Freshly ground black pepper

Method

  1. Heat a grill pan or barbecue until very hot.

  2. Grill the sourdough slices until crisp at the edges with dark grill marks, 1–2 minutes per side.

  3. Rub the cut side of the garlic clove lightly over the hot toast.

  4. Arrange the toast on a plate and drizzle with olive oil.

  5. Drain the sardines and lay them whole over the warm toast.

    Laying them whole looks better than crushing them into a paste.

  6. Drizzle with fresh lemon juice and scatter over the lemon zest, chili flakes, and black pepper.

  7. Finish with chopped flat-leaf parsley and serve at once.
