Chocolate Overnight Oats

Ingredients

For the chocolate base

  • 1/4 cup hot water (60 ml)
  • 1/4 cup raw cacao powder or unsweetened cocoa powder (24 g)
  • 1-2 tbsp pure maple syrup (20-40 g)
  • 1 1/2 cups soy milk (360 ml)
  • 1 1/2 cups high-protein plant-based plain unsweetened yogurt (360 g)
  • 1 1/2 cups rolled oats (150 g)
  • 3 tbsp chia seeds (30-35 g)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 tsp pure vanilla extract

For serving - Option 1

  • raspberries
  • chopped pistachios
  • tahini
  • orange zest

For serving - Option 2

  • pear or apple, sliced
  • almond butter
  • ground cinnamon

Method

For the chocolate base

  1. Whisk the hot water, cacao powder, and maple syrup together in a bowl until smooth.

  2. Whisk in the soy milk and high-protein plant-based yogurt.

  3. Add the rolled oats, chia seeds, ground cinnamon, kosher salt, and vanilla extract, then stir until well combined.

  4. Divide the mixture into 3 jars, seal with lids, and refrigerate until thickened.

  5. To boost protein content, mix 1/2 scoop of protein powder with a splash of water to form a slurry, then stir it into a jar of oats before serving.
