Ingredients
Preheat the oven to 375°F (190°C) and line a 12-cup muffin tray with paper liners.
Toss the diced apples, flour, and ground cinnamon together in a bowl until coated.
Combine the brown sugar, flour, and softened butter using your hands or a fork until coarse crumbs form.
Whisk together the flour, baking powder, baking soda, and salt in a bowl.
In a separate bowl, cream together the softened butter and granulated sugar until fluffy, about 2–3 minutes.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually fold in the dry ingredients and milk, alternating between the two, mixing until just combined.
Gently fold the cinnamon-coated apples into the batter.
Divide the batter evenly among the lined muffin cups using an ice cream scoop.
Generously top each muffin with the prepared streusel topping.
Bake for 18–22 minutes until a toothpick inserted into the center comes out clean.
