Almond Croissants

Ingredients

For the syrup

  • 1 cup water
  • 1/2 cup sugar
  • 1 tbsp amaretto or brandy

For the almond paste

  • 1 cup almond flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, softened
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract

To assemble

  • 3 day-old croissants
  • 1/2 cup sliced almonds
  • Powdered sugar, for dusting

Method

For the syrup

  1. Combine the water and sugar in a small saucepan over medium heat until the sugar dissolves.

  2. Remove from the heat and stir in the amaretto or brandy.

For the almond paste

  1. Mix the almond flour, sugar, and salt in a bowl.

  2. Add the softened butter, egg, and vanilla extract.

  3. Stir until smooth and creamy, about 2 minutes.

To assemble

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. Slice the day-old croissants in half horizontally.

  3. Gently dip both cut sides of each croissant into the syrup to coat.

  4. Spread a generous layer of almond paste inside each croissant.

  5. Close the croissants and spread another layer of almond paste on top.

  6. Press the sliced almonds into the top paste layer.

  7. Bake until golden brown and crispy on top, 12–15 minutes.
