Ingredients
Heat a splash of olive oil in a large pot over medium heat, add the diced onion, and cook until softened and translucent, 5–7 minutes.
Stir in the spices and cook until fragrant, about 1 minute.
Add the diced tomatoes and tomato puree, stirring well to combine with the onion mixture.
Pour in the coconut milk and stir until smooth and creamy.
Add the drained chickpeas to the pot, reduce heat to low, and simmer until slightly thickened, 8–10 minutes.

Stir in the fresh spinach and a generous drizzle of tahini, stirring until the spinach is wilted, 1–2 minutes.
Serve hot over cooked rice alongside warm flatbread, topped with sliced red onion and fresh cilantro.
