Ingredients

  • Fresh ripe coffee cherries

Method

  1. Soak coffee cherries in water and discard any that float.

  2. Remove pulp and separate insect-damaged beans.

  3. Blend the pulp into a paste.

  4. Place clean beans and pulp paste into a glass jar and close lid to ferment anaerobically.

  5. Ferment for 3 to 5 days with the lid closed. Release gas during the process if pressure becomes too high.

    Then 5 min of waiting

  6. Rinse beans with water to remove excess pulp.

  7. Sun-dry coffee beans in a mesh net for several weeks until moisture content reaches around 11%.

    Then 14 min of waiting

  8. Remove parchment layer from the dried beans.

  9. Roast coffee beans over a flame until medium-dark roast level is achieved.

  10. Coarsely grind coffee beans.

  11. Add ground coffee to a press and pour in hot water.

  12. Allow coffee to brew for 4 minutes before pressing and serving.
