Ingredients

  • 1 lb pork belly, sliced into bite-sized pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb ginger, minced
  • 4 large tomatoes, chopped
  • 2 tbsp fish sauce (patis)
  • 3 cups water
  • 1 tsp chicken or beef powder
  • 1/2 tsp ground black pepper
  • 3 green long chilies (siling haba)
  • 1 bunch bok choy (pechay), chopped

Method

  1. Sear the pork belly pieces in a pan over medium heat until they render their fat and turn golden brown.

  2. Remove the meat from the pan, leaving the rendered fat.

  3. Sauté the chopped onion, minced garlic, and minced ginger in the remaining pork fat until fragrant.

  4. Add the chopped tomatoes and the browned pork belly back into the pan.

  5. Season with fish sauce and pour in the water.

  6. Bring to a boil, then cover and simmer until the pork belly becomes tender.

  7. Add the chicken or beef powder, ground black pepper, and green long chilies.

  8. Add the chopped bok choy, stir gently, and simmer for another 2 minutes until the leaves are tender.

    Then 2 min of waiting

  9. Adjust flavor with extra fish sauce if needed, then serve hot with steamed rice.
