Sipo Eggs

Ingredients

  • 20 quail eggs
  • 2 tbsp butter
  • 1 tbsp cooking oil
  • 250 g shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/2 cup cooked ham, diced
  • 1/2 cup carrots, diced
  • 1/2 cup jicama (singkamas), diced
  • 1/2 cup chicken broth
  • 250 ml Nestle All Purpose Cream (about 1 cup)
  • 1/2 cup frozen green peas
  • 1 sachet Maggi Magic Sarap (8 g)
  • Ground black pepper to taste

Method

  1. Bring a pot of water to a boil, then add the quail eggs and cook for 2 minutes.

  2. Transfer the boiled quail eggs to ice water, peel them, and set aside.

  3. In a large pan, melt the butter over medium heat and add the cooking oil.

  4. Add the shrimp and sauté until they turn orange, then remove them from the pan and set aside.

  5. In the same pan, sauté the garlic, onion, and diced ham until fragrant.

  6. Add the carrots and jicama, then sauté for 1 minute.

  7. Pour in the chicken broth and simmer until the vegetables are slightly tender, about 2–3 minutes.

  8. Stir in the Nestle All Purpose Cream and bring to a gentle simmer.

  9. Add the frozen green peas and the cooked shrimp back into the pan.

  10. Season with Maggi Magic Sarap and ground black pepper to taste, stirring well to combine.

  11. Add the peeled quail eggs and gently toss until warmed through and fully coated in the sauce.
