Ingredients

For the marinade

  • 500 g beef sirloin, thinly sliced
  • 3 tbsp calamansi juice
  • 1/4 cup soy sauce
  • 1/2 tsp ground black pepper

For cooking

  • 2 tbsp cooking oil
  • 3 cloves garlic, minced
  • 1 large red onion, sliced into rings
  • 1 cup water
  • 1 tsp sugar (optional)

Method

For the marinade

  1. Combine the beef, calamansi juice, black pepper, and soy sauce in a bowl and mix well.

  2. Marinate for at least 15 minutes.

    Then 15 min of waiting

For cooking

  1. Heat 1 tbsp of cooking oil in a pan over medium heat and sear the beef slices until browned on both sides, about 2 minutes per side.

  2. Remove the seared beef from the pan and set aside.

  3. Add the remaining oil to the same pan and saute the garlic until lightly browned, about 1 minute.

  4. Add half of the red onion rings and cook until soft, about 2 minutes.

  5. Return the seared beef to the pan along with the reserved marinade.

  6. Pour in the water and bring to a simmer.

  7. Cover and simmer over low heat until the beef is tender, 15–20 minutes.

    Then 15 min of waiting

  8. Stir in the sugar, if using, and adjust seasoning to taste.

  9. Top with the remaining raw onion rings, cover, and cook for another 1–2 minutes until slightly softened.
