Ingredients
Lay the bacon slices on a cold flat-top griddle or skillet and turn the heat to medium-high.
Fry the bacon until crispy, flipping as needed, about 6–8 minutes total, then drain on paper towels.
Melt the butter in a pan over medium-high heat, add the diced onions and a pinch of salt, and cook until softened and browned, about 8–10 minutes.

Transfer the cooked onions to a bowl.
Place the split buns cut-side down on the griddle at medium-low heat (about 325°F / 160°C) and toast until lightly browned, about 1–2 minutes.
Place the toasted buns cut-side up on the aluminum foil sheet.
Squeeze ketchup in 3 concentric circles on both top and bottom bun halves.
Squeeze yellow mustard in 2 concentric circles on both bun halves.
Layer the sliced jalapeños, caramelized onions, and bacon on the bottom bun.
Increase the flat-top or skillet heat to high, until it reaches at least 400°F (200°C).
Place two beef balls on the hot griddle and press gently with parchment paper underneath just to flatten the surface slightly.
Let the patties sear undisturbed for 30 seconds.
Flip the patties and smash them with a heavy press or spatula, breaking the seared crust to spread the meat out slightly without pressing paper-thin.
Breaking the initial crust during the smash is what keeps the burger interior tender and juicy.
Season the smashed top sides with salt and cook for 30 seconds.
Flip both patties again, cook for 30 seconds, then place two overlapping slices of American cheese on one patty.
After another 30 seconds, stack the plain patty directly on top of the cheese-covered patty.
Transfer the double-stacked patty onto the bacon-covered bottom bun, then top with the upper bun.
Wrap the entire burger tightly in the aluminum foil sheet and let it sit wrapped for 2–3 minutes to steam the bun and melt the cheese completely before serving.

To make a single burger as shown in the video, use 2 patties (about 7 oz / 200 g total ground chuck) and 2 slices of American cheese. The remaining two patties can be used for a second burger.
