For the dal preparation

  • 1/2 cup green moong dal
  • Hot water, for soaking

For the dough

  • 2 cups wheat flour
  • Salt, to taste
  • 1 tsp crushed red chilli flakes
  • 2 green chillies, chopped
  • 1 tsp grated ginger
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1 pinch asafoetida (hing)
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Oil, for dough and cooking
  • Fresh coriander leaves, chopped

To cook

    Method

    For the dal preparation

    1. Add the green moong dal into a grinder jar and grind it coarsely to make dal churi.

    2. Wash the ground dal churi thoroughly in a bowl.

    3. Pour hot water over the washed dal churi, cover, and let it soak to soften.

      Then 60 min of waiting

    For the dough

    1. Add the wheat flour to the soaked moong dal bowl along with salt, crushed red chilli, green chillies, grated ginger, coriander powder, cumin seeds, asafoetida, turmeric powder, garam masala, chopped coriander, and a splash of oil.

    2. Knead everything together, adding a little water bit by bit, until you form a soft, smooth dough.

    3. Cover the dough and let it rest.

      Then 30 min of waiting

    To cook

    1. Knead the dough briefly, take a portion, and roll it out partially on a surface.

    2. Apply a little oil on top, fold it into a triangle, and roll gently to form a slightly thick triangular paratha.

    3. Heat a tawa or griddle, grease with a little oil, and place the rolled paratha on it over medium-high heat.

    4. Apply oil on both sides and press with a spatula until golden-brown spots appear on both sides.

    5. Repeat for the remaining dough portions and serve warm with yogurt, chutney, or pickle.
