Homemade Hummus

Ingredients

  • 2 cans chickpeas (400 g / 14 oz each)
  • 1/2 tsp baking soda
  • 1 cup tahini
  • 1/3 cup fresh lemon juice
  • 4 cloves roasted garlic
  • 1 pinch sea salt
  • 1 pinch ground cumin
  • 4 ice cubes
  • 2 tbsp olive oil
  • 1 tbsp herb oil
  • 1 tsp smoked paprika
  • 2 tbsp toasted pine nuts
  • Fresh herbs (such as parsley or mint)

Method

  1. Drain and rinse the chickpeas in a colander.

  2. Transfer the chickpeas to a pan, cover with water, add the baking soda, and bring to a simmer.

  3. Simmer gently until the chickpeas are very tender, about 20 minutes.

  4. Drain the chickpeas and rub them under cold water to remove their skins.

  5. In a food processor, combine the tahini, fresh lemon juice, roasted garlic, salt, and cumin, then blend until smooth.

  6. Add the warm chickpeas and ice cubes to the processor, then blend continuously for 4 to 5 minutes until ultra-creamy.

  7. Spread the hummus onto a serving plate or shallow bowl.

  8. Drizzle with olive oil and herb oil.

  9. Garnish with smoked paprika, toasted pine nuts, and fresh herbs before serving.
