Ingredients

For the kofta

  • 1 medium onion, grated and drained of excess juice
  • 1 kg ground meat (beef or lamb blend)
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp allspice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • To serve
  • Flatbreads or pita

To serve

    Tahini sauce

    • Fresh parsley, chopped
    • Pickles and sliced tomatoes

    Method

    For the kofta

    1. Grate the onion into a bowl lined with paper towels to drain excess liquid.

    2. Combine the ground meat, drained grated onion, chopped parsley, garlic powder, ground cumin, ground coriander, allspice, salt, and black pepper in a large bowl.

    3. Mix and knead the mixture by hand until well combined and cohesive.

    4. Divide the meat mixture and shape securely around wide metal skewers.

    5. Prepare a charcoal grill with hot coals.

    6. Grill the skewers over direct heat on hot coals, turning frequently until well browned and cooked through, about 10–15 minutes.

    To serve

    1. Serve the kofta hot on flatbreads topped with tahini, fresh parsley, pickles, and sliced tomatoes.
