Ingredients
Combine the brine mix with water according to package directions in a large container.
Submerge the chicken quarters in the brine.
Then 240 min of waiting
Set up your smoker for indirect smoking at 250°F (120°C) using post oak wood.
Remove the chicken quarters from the brine and arrange them skin-side up on a board.
Season generously with the rub on all sides.
Place the chicken quarters directly on the smoker grate.
Smoke until the internal temperature reaches 170–175°F (77–79°C), about 2 hours.
Then 120 min of waiting
Brush the chicken quarters generously with the BBQ sauce on all sides.
Close the smoker and let the sauce tack up, about 5–10 minutes.
Then 5 min of waiting
Remove from the smoker, let rest 5 minutes, and serve.
