Buffalo Turkey Sliders

Ingredients

For the turkey

  • 1 turkey breast
  • 1 tbsp mayonnaise
  • Meat Church Garlic and Jalapeño BLANCO seasoning
  • 4 tbsp butter
  • 1 cup buffalo hot sauce (such as Frank's RedHot)

For the sliders

  • 12 slider buns
  • 6 slices pepper jack cheese

Method

For the turkey

  1. Preheat the smoker to 275°F (135°C).

  2. Slather the turkey breast all over with mayonnaise.

  3. Season generously on all sides with the Garlic and Jalapeño BLANCO seasoning.

  4. Place the turkey breast directly on the smoker grate and smoke until the internal temperature reaches 155°F (68°C), about 1 hour 30 minutes.

  5. Transfer the turkey to a foil pan, top with butter, and pour over the buffalo sauce.

  6. Cover the pan tightly with foil and leave to rest off the heat, 15 minutes.

For the sliders

  1. Remove the turkey from the pan, slice it finely, and lay the slices across the bottom halves of the slider buns.

  2. Pour the warm buffalo butter sauce from the pan over the sliced turkey.

  3. Top with pepper jack cheese slices and return the open sliders to the smoker until melted, 3–5 minutes.

  4. Drizzle with ranch dressing, top with the bun lids, and slice into individual sliders.
