Butterflied BBQ Drumsticks

Ingredients

For the chicken

  • 12 chicken drumsticks
  • 3 tbsp Meat Church Texas Sugar rub (or favorite BBQ rub)

For the sauce

  • 1 cup Meat Church Sizzlin' Salvation Sweet Heat BBQ Sauce
  • To serve
  • 1 tbsp fresh parsley, chopped

To finish

    Method

    For the chicken

    1. Heat your smoker or pellet grill to 350°F (175°C). Use pecan and cherry wood pellets if available.

    2. Using a sharp boning knife, slice down the length of each drumstick along the bone to open it up flat into a butterfly shape.

    3. Generously season both sides of the butterflied drumsticks with the BBQ rub, patting it into the meat.

    4. Let the seasoned chicken rest at room temperature so the rub draws out moisture and adheres.

      Then 15 min of waiting

    5. Place the drumsticks flat on the grill grates and close the lid.

    6. Cook the drumsticks until the internal temperature reaches around 170°F (77°C).

      Then 40 min of waiting

    For the sauce

    1. Pour the BBQ sauce into a wide, heat-safe mug or container deep enough to submerge a drumstick.

    2. Dip each cooked drumstick directly into the BBQ sauce until fully coated, then place back on the grill.

    To finish

    1. Increase the grill temperature to 425°F (220°C).

    2. Cook for a few extra minutes until the sauce sets and slightly caramelizes.

      Then 5 min of waiting

    3. Remove from the grill and let cool slightly.

    4. Sprinkle with chopped fresh parsley before serving.
