Ingredients
Melt the butter in a skillet over medium heat.
Add the minced garlic and sauté until fragrant, 3–4 minutes.
Stir in the parsley and thyme, and cook for 1 minute.
In a large bowl, combine the mayonnaise, grated parmesan, sautéed garlic and herbs with their butter, and extra Garlic Jalapeño seasoning to taste.
Mix thoroughly into a thick paste.
Preheat the smoker or grill to 425°F (220°C).
Season the chicken wings generously on all sides with the Garlic Jalapeño seasoning.
Arrange the wings on a wire rack and place them in the smoker.
Smoke until cooked through and the skin is crisp, about 30 minutes (internal temperature of 185°F/85°C).
Then 30 min of waiting
Transfer the hot wings immediately into the bowl with the sauce paste.
Toss and mix thoroughly until the heat from the wings melts the cheese and coats every wing completely.
Top with extra grated parmesan before serving.
