Ingredients
Put 2–3 cups of water in a wok or pot and bring to a boil over high heat.
Add the chicken bones and scraps, cover, and bring back to a boil on high heat.
Once boiling, turn down to medium heat and simmer covered to blanch, about 3 minutes.
Then 3 min of waiting
Transfer the blanched chicken bones to a bowl of clean water and rinse off any scum on the surface.
Put 4–5 cups of water into a pot and set to high heat.
Add the rinsed bones to the pot, cover, and bring to a boil.
Once boiling, turn the stove to low heat and simmer covered for 25–30 minutes (no more than an hour).
Then 25 min of waiting
Remove the bones and scraps from the pot, leaving the clear chicken broth.
Blanching the chicken bones first removes proteins and fat that make the soup murky, yielding a clear, clean-tasting broth.
The broth can be used immediately as a soup base or stored in the fridge for 3–4 days (or frozen for up to a few months).
