Broiled Branzino

Ingredients

    For the seasoning sauce

    • 2 garlic cloves, minced
    • 3 green onions, chopped (reserve some for garnish)
    • 3 tbsp soy sauce
    • 1 tsp gochugaru (Korean hot pepper flakes)
    • 1 tbsp sesame oil

    For the garnish

    • 1/2 small white onion, thinly sliced
    • 1 tbsp sesame seeds

    For the fish

    • 1 whole branzino (about 1 lb / 450 g), cleaned and gutted
    • 1/4 tsp salt
    • 1 tbsp olive oil

    Method

    1. Preheat the broiler to 500°F (260°C).

    For the seasoning sauce

    1. Mince the garlic cloves and place them in a small bowl.

    2. Chop the green onions, reserve a small handful for garnish, and add the rest to the bowl with the garlic.

    3. Add the soy sauce, gochugaru, and sesame oil to the bowl, then stir until well combined.

    For the garnish

    1. Thinly slice the white onion and place it in a bowl of cold water to soak and reduce its sharpness.

    For the fish

    1. Make 3 diagonal slashes on each side of the branzino with a sharp knife.

    2. Season the fish evenly with salt, rubbing it into the cuts and cavity.

    3. Coat the fish evenly with olive oil using your hands or a brush.

    4. Oil the rack of a broiler pan and place the fish on it.

    5. Broil the fish on the top rack until golden brown and crispy, 4–5 minutes.

    6. Carefully flip the fish over and broil the other side until cooked through, another 4–5 minutes.

    7. Drain the soaked onion slices through a strainer and pat dry.

    8. Transfer the broiled fish to a serving plate.

    9. Spoon the seasoning sauce evenly over the top of the fish.

    10. Top with the sliced white onions, reserved green onions, and sesame seeds before serving.

    11. Serve with steamed rice, lettuce leaves for wrapping, and kimchi.
