Beef Chow Mein

Ingredients

For the sauce

  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • 2 tbsp water

For the beef and noodles

  • 250 g egg noodles
  • 300 g rump or sirloin steak, thinly sliced
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 onion, sliced
  • 1/2 carrot, cut into matchsticks
  • 100 g savoy cabbage or pak choi, sliced
  • 2 spring onions, sliced

Method

For the sauce

  1. Mix the soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, white pepper, and water together in a small bowl.

For the beef and noodles

  1. Cook the egg noodles in boiling water according to package instructions, then drain and set aside.

  2. Heat the vegetable oil in a wok or large frying pan over high heat.

  3. Add the sliced beef and stir-fry until browned, about 2–3 minutes.

  4. Add the garlic, ginger, onion, carrot, and cabbage, and stir-fry for another 2 minutes until slightly softened.

  5. Add the drained noodles and the sauce, tossing everything together over high heat for 1–2 minutes until the noodles are well coated and hot.

  6. Stir in the spring onions and serve immediately.
