Ingredients

For the chicken

  • 600 g chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tbsp cornflour
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

For the sauce

  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sweet chilli sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 1 tsp cornflour mixed with
  • 2 tbsp cold water

For serving

  • 1 tbsp sesame seeds
  • Cooked rice or fried rice

Method

For the chicken

  1. Preheat the air fryer to 400°F (200°C).

  2. Toss the chicken pieces with the vegetable oil, soy sauce, cornflour, garlic powder, and black pepper until evenly coated.

  3. Place the chicken in a single layer in the air fryer basket and cook for 12–15 minutes, shaking halfway through, until crispy and cooked through.

For the sauce

  1. While the chicken cooks, combine the soy sauce, honey, sweet chilli sauce, brown sugar, sesame oil, minced garlic, and minced ginger in a small saucepan over medium heat.

  2. Bring the mixture to a simmer, then stir in the cornflour slurry and cook until thickened, 2–3 minutes. To finish

  3. Transfer the crispy air-fried chicken to a bowl, pour over the warm sauce, and toss gently until well coated.

  4. Serve hot over cooked rice, sprinkled with sesame seeds.
