Herb Butter Steak Sauce

Ingredients

  • 1 cup unsalted butter, cubed
  • 1 shallot, sliced
  • 2 cloves garlic, sliced
  • 5 sage leaves
  • Handful tarragon leaves
  • 7 basil leaves
  • Handful parsley leaves
  • 1 tbsp shiro dashi
  • 1 tsp white vinegar
  • 2 tsp capers
  • 4 anchovy fillets
  • 2 tsp Worcestershire sauce
  • 1 egg yolk
  • Salt to taste

Method

  1. Add the butter, shallot, and garlic to a small saucepan over medium heat, cooking until the shallot and garlic soften, 2–3 minutes.

  2. Remove the shallot and garlic from the melted butter, reserving the butter and aromatics separately.

  3. Place the sage, tarragon, basil, parsley, shiro dashi, white vinegar, capers, anchovy fillets, Worcestershire sauce, egg yolk, reserved cooked shallot and garlic, and a pinch of salt into a blender.

  4. Blend on high until smooth, about 30 seconds.

  5. With the blender running on low speed, slowly stream in the warm melted butter until the sauce becomes light green and creamy, 1–2 minutes.

  6. Stir in extra finely chopped fresh herbs if desired, and serve warm over steak or fries.
