Pickled Watermelon Rind

Ingredients

  • Rind of 1 large watermelon
  • 200 g granulated sugar (1 cup)
  • 360 ml apple cider vinegar (1 1/2 cups)
  • 180 ml water (3/4 cup)
  • Pickling spices (cinnamon stick, mustard seed, black peppercorns)

Method

  1. Trim all remaining red flesh from the watermelon rind.

  2. Peel the outer green skin with a vegetable peeler.

  3. Cut the prepared rind into fingers or small cubes.

  4. Pack the prepared rind tightly into heat-proof jars.

  5. In a small pot, combine the sugar, apple cider vinegar, and water.

  6. Add the pickling spices to the pot and bring the liquid to a boil over medium-high heat, 3–5 minutes.

  7. Carefully pour the hot liquid over the watermelon rind in the jars until completely submerged.

  8. Seal the jars and allow to cool to room temperature before serving or refrigerating.
