Steak Frites with Herb Sauce

Ingredients

For the fries

  • Oil for deep frying
  • 2 large potatoes, cut into thin fries
  • Salt

For the herb sauce

  • 1 cup fresh herbs (parsley, chives, estragon)
  • 1/2 cup mayonnaise
  • 1 garlic clove
  • 1 tbsp olive oil
  • Salt and black pepper

For the steak

  • 1 thick ribeye steak (about 400 g)
  • 1 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 cloves garlic, crushed
  • Salt and black pepper

To assemble

    Method

    For the fries

    1. Heat the oil in a heavy pot or deep fryer to 350°F (175°C).

    2. Deep fry the potato strips until golden and crispy, about 5–7 minutes.

    3. Drain on paper towels and season immediately with salt.

    For the herb sauce

    1. Combine the fresh herbs, mayonnaise, garlic clove, olive oil, salt, and pepper in a blender.

    2. Blend until smooth and bright green.

    For the steak

    1. Season the ribeye generously with salt and pepper on all sides.

    2. Heat the vegetable oil in a heavy skillet over high heat until smoking.

    3. Add the steak and sear until a rich crust forms, about 2–3 minutes per side.

    4. Add the butter, garlic, thyme, and rosemary to the pan.

    5. Baste the steak continuously with the melted butter for 1–2 minutes.

    6. Transfer the steak to a board and let it rest for 5 minutes before slicing.

    To assemble

    1. Slice the steak into strips and arrange on a platter alongside the warm fries.

    2. Spoon the green herb sauce over the steak slices and serve immediately.
