Ingredients

For the pasta

  • Water
  • Yellow cherry tomatoes
  • Vanilla pod from Madagascar
  • 3D spaghetti

For the sauce

  • Date tomatoes
  • Strawberries, equal weight to date tomatoes
  • Sugar, 30% of the weight of tomatoes and strawberries combined
  • Balsamic vinegar

For assembly

  • Extra virgin olive oil
  • Shortcrust pastry base rounds

  • Fresh thyme
  • Fresh basil

Method

For the pasta

  1. Add vanilla to yellow cherry tomato water, bring to a boil, add 3D spaghetti, and boil for 7 minutes.

  2. Drain the pasta gently and place it on a plate lined with absorbent paper.

  3. Brush the spaghetti with extra virgin olive oil to make them shiny.

For the sauce

  1. Preheat the oven to 465°F (240°C).

  2. Blanch and peel the date tomatoes.

  3. Roast the peeled date tomatoes in the oven at 465°F (240°C) for about 10 minutes until they start to dehydrate.

  4. Remove the date tomatoes from the baking paper and place them in a saucepan.

  5. Add an equal weight of strawberries and sugar (30% of the combined tomato and strawberry weight) to the saucepan.

  6. Add a drop of balsamic vinegar to tone down the sweetness.

  7. Cook the mixture over a constant, low flame, stirring occasionally so it does not stick, for about 2 hours until dense, shiny, and creamy.

For assembly

  1. Place a section of cooked 3D spaghetti onto a shortcrust pastry base round.

  2. Pipe the strawberry-tomato compote over the pasta to look like tomato sauce.

  3. Add pieces of basil-flavored butter crumble on top for crunch.

  4. Finish with fresh thyme and basil.
