Old School BBQ Baked Beans

Ingredients

  • 1 lb (450 g) breakfast sausage
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 2 cans (about 28 oz / 800 g each) baked beans, drained
  • 2 tbsp honey
  • 1/4 cup (50 g) brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp hot sauce
  • 2 tbsp yellow mustard
  • 1/2 cup (120 ml) barbecue sauce

Method

  1. Preheat your smoker or grill for indirect cooking at 250°F (120°C).

  2. Brown the breakfast sausage in a skillet over medium heat until fully cooked, 6–8 minutes.

  3. Remove the sausage from the pan with a slotted spoon, leaving the grease in the pan.

  4. Add the diced onion and bell pepper to the skillet with the sausage grease and cook until softened, 5–7 minutes.

  5. Add the minced garlic to the skillet and cook until fragrant, about 1 minute.

  6. In a large disposable aluminum foil pan, combine the drained baked beans, cooked sausage, cooked vegetables, honey, brown sugar, Worcestershire sauce, hot sauce, yellow mustard, and barbecue sauce.

  7. Stir the mixture until all ingredients are well incorporated.

  8. Place the pan uncovered on the smoker or grill.

  9. Smoke the beans for 3 hours, stirring every hour, until the sauce thickens and caramelizes.

  10. Stirring the beans every hour helps break up the film that forms on top and allows the smoke flavor to penetrate evenly throughout the dish.
