Ingredients

For the skewers

  • Wild turkey breast, cut into bite-sized cubes
  • Green bell peppers, cut into chunks
  • Onions, cut into chunks
  • Turkey seasoning rub
  • Wooden skewers, soaked in water

For the garlic herb butter

  • Butter
  • Garlic, minced
  • Fresh parsley, chopped
  • Turkey seasoning rub

    For the skewers

    1. Thread the bell peppers, onion, and cubed wild turkey breast onto the soaked wooden skewers, alternating ingredients.

    2. Season the assembled skewers generously on all sides with the turkey rub.

    3. Place the skewers into the smoker preheated to cook low and slow.

    For the garlic herb butter

    1. Melt the butter and stir in the minced garlic, chopped parsley, and a pinch of turkey seasoning.

    For the skewers

    1. Once the internal temperature of the turkey reaches 145–150°F (63–66°C), brush the garlic herb butter generously over the skewers while they continue to cook.

    2. Continue cooking and basting until the turkey reaches an internal temperature of 160–165°F (71–74°C).

    3. Remove the skewers from the smoker to a cutting board and drizzle with the remaining garlic herb butter before serving.
