Smoked Baby Back Ribs

Ingredients

  • 2 racks baby back pork ribs
  • 1/4 cup BBQ rub (such as Killer Hogs The BBQ Rub)
  • 1/2 cup butter, melted
  • 1/2 cup apple juice
  • 1/2 cup BBQ sauce (such as Killer Hogs The BBQ Sauce)

Method

  1. Preheat the smoker to 275°F (135°C).

  2. Trim the racks of ribs, squaring off the ends so they cook evenly.

  3. Season both sides of the ribs heavily with the BBQ rub, with no binder.

  4. Place the ribs in the preheated smoker.

  5. Smoke until the rub fuses into the meat and a dark bark forms, 2 to 2 1/2 hours.

  6. Combine the melted butter, apple juice, 1/4 cup of the BBQ sauce, and 1 tbsp of the BBQ rub in a liquid measuring cup.

  7. Lay out a large sheet of heavy-duty foil, place a rack of ribs on it, pour half the butter mixture over the ribs, and wrap tightly.

    Wrap the ribs tightly so they steam in the liquids without leaking.

  8. Repeat with the second rack of ribs and the remaining liquid mixture.

  9. Return the wrapped ribs to the smoker.

  10. Cook wrapped until the ribs are flexible and tender, 1 to 1 1/2 hours.

  11. Remove the wrapped ribs from the smoker and place them into an empty dry cooler to rest.

  12. Unwrap the ribs, brush both sides with the remaining BBQ sauce, and sprinkle with a little extra BBQ rub.

  13. Return the sauced ribs to the smoker uncovered until the sauce caramelizes into a glaze, 15 to 20 minutes.
