Drumstick Curry

Ingredients

For the masala paste

  • 2 tbsp peanuts, roasted
  • 2 tbsp dry coconut, sliced or grated
  • 2 tsp sesame seeds
  • 2 tsp poppy seeds
  • Water, as needed

For the curry

  • 4 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 4 cloves
  • 3 cardamom pods
  • 1 pinch asafoetida (hing)
  • 2 tsp ginger garlic paste
  • 1 sprig curry leaves
  • 1 finely chopped onion
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp salt
  • 1.5 cups tomato puree
  • 5 drumsticks, cut into 2-inch pieces
  • Hot water, as needed

Method

For the masala paste

  1. Add roasted peanuts, dry coconut, sesame seeds, and poppy seeds to a blender jar.

  2. Add a little water and blend until a smooth paste forms.

For the curry

  1. Heat oil in a large pan over medium heat.

  2. Add cumin seeds, mustard seeds, cloves, cardamom, asafoetida, ginger garlic paste, and curry leaves, allowing them to sputter in the oil.

  3. Add chopped onion and sauté over medium heat until golden brown, 4–5 minutes.

  4. Lower the heat, then add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt.

  5. Sauté the spices on low heat until aromatic, about 1 minute.

  6. Add tomato puree and mix well, cooking until the oil begins to separate from the masala, 4–5 minutes.

  7. Add the prepared masala paste and mix thoroughly.

  8. Cook the gravy until the raw flavor disappears and oil separates again, 3–4 minutes.

  9. Add drumstick pieces and toss to coat evenly in the masala.

  10. Pour in hot water to adjust to a gravy consistency and stir well.

  11. Cover with a lid and simmer over low-medium heat until the drumsticks are soft and fully cooked, about 20 minutes.

    The drumsticks are cooked when they are tender enough to be easily pierced with a fork and have absorbed the gravy flavours.

  12. Serve hot with steamed rice, chapathi, or roti.
