Coffee-Marinated NY Strip Steaks

Ingredients

For the marinade

  • 4 cups brewed coffee, at room temperature

For the steaks

  • 4 NY strip steaks (about 250 g / 9 oz each)
  • 1 tbsp coarse salt
  • 1 tbsp coarsely ground black pepper

Method

For the marinade

  1. Brew 4 cups of coffee and let it cool completely to room temperature.

For the steaks

  1. Place 3 of the steaks into a sealable container or large zip-top bag, pour the cooled coffee over them until fully submerged, seal, and refrigerate.

    Then 120 min of waiting

    Use a choice-grade cut; the acidic coffee helps tenderize tougher meat.

  2. Remove the steaks from the coffee marinade and pat them thoroughly dry with paper towels.

  3. Prepare a charcoal grill for high-heat direct cooking.

  4. Season all 4 steaks (including the unmarinated control steak) generously on all sides with the salt and black pepper.

  5. Grill the steaks over high direct heat, flipping frequently, until a deep browned crust forms and the internal temperature reaches 130°F (54°C) for medium-rare, 8–12 minutes.

  6. Transfer the steaks to a cutting board and let them rest before slicing.
